BUTTERSCOTCH PUDDING TARTS



These tarts were fun to make. I went for a bit of a different assembly and made them in a mini tart pan. The dough comes out a bit rougher looking than the original, but it is still delicious, with a somewhat earthy flavor. It calls for both whole wheat and regular flour as well as ground oat flakes.



The butterscotch filling is simply heavenly. The recipe calls for a topping of chopped Butterfingers. I substituted with chopped up Twix (a favorite), since Butterfingers are hard to find here.

 The combination of the earthy flavor of the crust, the sweetness of the pudding and the crunch of the Twix is perfect!

Vanilla Bean and Chocolate Budino


Budino- never heard the word before. Looked it up ( even though it said what it was  in Baked Explorations) and it is basically the Italian word for pudding or custard.
Surprisingly easy to make, the rich, velvety texture bears no resemblance whatsoever to store bought stuff. 


It really is a few moments in heaven as the rich, but not too sweet custard slides down your throat, and you get the slight hint of the bourbon /vanilla from the white pudding ( love seeing those specks of vanilla!) and the creamy softness of the milk chocolate.
You can eat it with or without the whipped cream- just looks pretty I think.

TWD Arborio Rice Pudding

I love the fall. The weather is finally cooling down and the night air is crisp. This is the time of year I sleep the best.
I have never tasted rice pudding before. Yes, it may sound unbelievable, but true. My mom never made it and I never really had the craving to try it. So this weeks recipe from Dorie's book was a perfect opportunity. After some searching I found the right kind of rice and began the task- a really easy process but for some reason, it just didn't turn out the way it ws supposed to. All went well until I put it in the fridge and waited and waited and waited. It barely thickened and the next day was still a bit soupy. I probably would add less milk next time- but there will not be a next time. Just not my " cup of rice" if you know what I mean. Maybe puddings in general are not my favorite thing- I'll take a rich cake, cookie or cupcake anytime! The taste and texture were strange for me and the rest of my family. Very , very sweet - and let me tell you- I love sweet, but this was sort of sickening. Chalk this one up to experience!
